Being a line cook at the New York State Fair is a difficult job. However, it becomes even tougher when the weather is hot! Just ask Adam Kirchenbauer, team leader for Santillo’s. “You can add another 15 to 20 degrees in there,” Kirchenbauer said.
Where Santillo’s employees are working is in an open-air tent, over a propane fired grill, cooking up sausages, hamburgers, onions, and peppers. While the tent allows for some breeze, it’s still gets very hot under the tent’s peak.
Santillo’s allows workers over the hot grills to take a break once an hour. Sometimes workers move to cooler stations. There is also a refrigerated trailer workers can escape to to cool off. Water is also free for the employees. “It’s not meant for everybody,” Kirchenbauer said. Sometimes local people hired don’t even make it through the first day. I would probably be included in the latter group!
